The Poisonous Plant Koreans Eat Anyway: 미국자리공 (American Pokeweed)
There is a plant growing along Korean roadsides right now that is poisonous from root to berry. Every part of it — the root most of all, but also the stem, the leaves, the seeds — contains compounds that cause vomiting, diarrhea, slow heart rate, seizures, and in sufficient quantity, death. This is not disputed. Toxicologists are clear about it. The plant has killed people.
Koreans eat the young leaves.
Not carelessly. Not accidentally. Deliberately, seasonally, after a specific preparation process that involves boiling the leaves multiple times and discarding the water between each boil. The result, when done correctly, is a spring green that has been part of the Korean table long enough that people know its name, know when to harvest it, and know exactly what happens if you skip a step.
The plant is 미국자리공 (*Phytolacca americana*), American pokeweed, and like several other plants on this blog, it came from North America.
What It Is
미국자리공 is a large herbaceous perennial in the family Phytolaccaceae, native to eastern North America and now naturalized across much of East Asia, Europe, and beyond. In Korea it grows in disturbed habitats — roadsides, embankments, forest edges, abandoned lots — reaching two to three meters tall at maturity. The leaves are large, smooth, and broadly oval, with a prominent midrib and lateral veins that give the leaf surface a slightly quilted appearance. New leaves in spring emerge a bright, almost luminous green; older leaves on established plants are darker and heavier.
The stem is one of the clearest identifiers. On mature plants, it turns a deep, saturated red-purple — a vivid color that stands out against the green of the surrounding vegetation and serves, unintentionally, as a visual warning. The flowers, which appear in summer on established plants, are small, white, and arranged in elongated racemes. By late summer and autumn, these become clusters of deep purple-black berries that look, from a distance, like oversized blackcurrants. They are not.
The name 미국자리공 means American jarigong — 자리공 being the native Korean species (*Phytolacca esculenta*), which is closely related and similarly prepared. 미국 simply means America. The naming convention is direct.
How It Got Here
The exact pathway of 미국자리공's introduction to Korea is not documented with the precision that the Gyeongin railway record gives us for 개망초, but the timeline places its spread through Korea in the mid-twentieth century — the period of the Korean War and its aftermath, when American military presence brought a wave of biological introductions that included seeds in feed, in packaging, and in soil attached to equipment.
Whether or not the Korean War was the literal entry point, the association is accurate enough that many Koreans of a certain generation connect the plant with that period. It came from America. It arrived in a disrupted landscape. It settled in and did not leave.
What is interesting about 미국자리공's story in Korea, compared to 개망초 or 금계국, is the response. The other two plants were named, classified, and mostly left alone or deployed as landscape tools. 미국자리공 was incorporated into the food system — cautiously, with specific knowledge attached. Someone figured out that the young spring growth, treated correctly, was edible. That knowledge spread and became part of the seasonal foraging tradition.
This is not unique to Korea. In the American South, young pokeweed shoots were long consumed as "poke salad" — also after extensive boiling. The plant's toxicity was known; the preparation was the answer. Different continent, same conclusion.
The Toxicity, and the Preparation
미국자리공 contains several toxic compounds, most notably phytolaccatoxin and phytolaccigenin — triterpene saponins concentrated most heavily in the root but present throughout the plant. It also contains a protein called pokeweed mitogen (PWM) that stimulates the immune system in ways that can be dangerous; this compound is actually used in laboratory settings to study lymphocyte activation, which is a measure of how biologically active it is. The berries contain additional toxic compounds. The root is the most dangerous part and should never be handled without care or consumed under any circumstances.
The young leaves — specifically the first flush of spring growth before the stem has fully colored — are the part traditionally prepared as food. The preparation involves boiling the leaves in a large quantity of water, discarding that water entirely, and repeating the process at least twice, sometimes three times. Each boiling cycle draws out water-soluble toxins. By the third boil, with fresh water each time, the leaves are considered safe for consumption by people who know the plant and its preparation.
The word "considered" is doing important work in that sentence. No formal safety threshold exists for this preparation in the way that, for example, a pharmaceutical dosage would. The traditional practice has been refined over generations of use, which is meaningful, but individual variation in tolerance, the age and condition of the plant, and errors in preparation all introduce risk. People have been poisoned by improperly prepared pokeweed in both Korea and North America. Children are particularly vulnerable and should not consume the plant.
The berries are a separate matter entirely. They are never eaten — the toxin concentration is too high and the preparation method used for leaves does not apply.
How to Identify It
The large, smooth, broadly oval leaves with prominent veining are the primary identifier in spring, when the plant is at the stage shown in these photographs. The leaves can reach thirty to fifty centimeters on established plants. They are glossy on the upper surface and paler below, with no teeth along the margin — a smooth, clean edge.
The red-purple stem, visible on plants that have been growing for more than one season, is the most reliable single identifier. A plant with large smooth leaves and a stem this color, in a disturbed habitat in Korea, is almost certainly 미국자리공. The root, if visible at the base, is thick and fleshy — sometimes reaching the diameter of a forearm on old plants — and cream-colored internally.
In summer and autumn, the elongated clusters of dark purple-black berries confirm the identification. They are attractive enough that children sometimes pick them, which is the source of most accidental poisonings.
The native Korean 자리공 (*Phytolacca esculenta*) is closely related and visually very similar. The clearest distinction is that 미국자리공 has a longer, more drooping flower/berry cluster and tends to grow larger overall. Both are treated with the same caution.
A Final Thought
What strikes me about 미국자리공 is the specific kind of knowledge it represents. This is not a plant you can approach casually. The margin between "prepared correctly" and "poisoned" is real, and the preparation requires attention and repetition. Someone, at some point after this plant arrived in Korea, decided it was worth learning how to eat it safely — and then that knowledge passed from person to person until it became part of the seasonal food culture.
That transmission of knowledge is itself worth noting. It is the opposite of what usually happens with introduced toxic plants, which are typically avoided, eradicated, or simply left alone. With 미국자리공, someone looked at a poisonous plant and thought: let me figure out how to eat this anyway.
Whether that impulse came from necessity, curiosity, or something else is not recorded. The plant is still here, still growing along the roadsides every spring, still toxic, still eaten by people who know exactly what they are doing.
